Recipes


RAdish Avocado Toast

Ingredients:


  • Toast (sprouted, sourdough or a fresh loaf from a local bakery)
  • Ghee
  • Salt
  • Ripe avocado
  • English cucumber
  • Microgreens (Spicy Daikon Radish)


Instructions:


  1. Toast your bread. I like it a bit crisp as it’s fun to bite in.
  2. Layer the warm toast with ghee.
  3. Sprinkle the salt.
  4. Add a good thick layer of fresh and ripened avocado.
  5. Sprinkle another layer of salt.
  6. Add a few slices of cucumber.
  7. Sprinkle a tad bit more salt.
  8. Top off the delicious toast with Radish microgreens!




Toasts with Avocado and Microgreen

Mushroom Broccoli Omelete

Ingredients:


  • 3/4 Cup Microgreens
  • 1 1/2 oz Mushrooms, white
  • 3 Eggs, large-
  • Salt and freshly ground pepper
  • 1 tbsp Butter, unsalted



instructions:


  1. Heat half the butter in a small nonstick skillet over medium-high heat. Cook mushrooms until all liquid is out and golden brown. season with salt and pepper and Transfer mushrooms to a small bowl; stir in microgreens.
  2. Whisk eggs in a medium bowl season with salt and pepper.
  3. Melt remaining butter over medium heat, swirling to coat bottom of pan. Pour eggs into skillet, and cook, until edges are set slightly. With a heatproof flexible spatula, push eggs from edge toward center, tilting pan to let uncooked eggs run underneath, until omelet is just set, 1 to 2 minutes. Place mushroom filling on 1 side of omelet. Using spatula, gently fold other side of omelet over filling.





Mushroom and Microgreen Omelet

Microgreen smoothie

Ingredients:


  • 1 Bananas
  • 1 Cup frozen berries
  • 1/2 Cup almond milk
  • 1/2 Cup greek yogurt
  • 1 Handful microgreens
  • 1 Tablespoon honey (optional)



instructions:


  1. Add all ingredients to a blender
  2. Blend on high for 2 minutes or until smooth and creamy
  3. Taste and adjust sweetness if necassary with honey
  4. Pour into glass and enjoy!





Smoothie with microgreeen and sprouted microgreen wheat sprouts.
